Lorrain de naissance, d\u00e8s l\u2019\u00e2ge de quatre ans je suis fascin\u00e9 par les cuisines et les petits plats que me pr\u00e9pare ma nourrice.
En 1987 je commence une formation<\/strong> dans un h\u00f4tel-\u00e9cole \u00e0 Lom\u00e9 (Togo) \u00ab L\u2019h\u00f4tel le B\u00e9nin \u00bb, puis au lyc\u00e9e h\u00f4telier du ch\u00e2teau des Coudraies \u00e0 Etiolles (Evry) o\u00f9 j’obtiens les CAP cuisine, BEP cuisine, Mention compl\u00e9mentaire Traiteur et CAP P\u00e2tissier glacier confiseur chocolatier.<\/p>

Je fais mes classes<\/strong>, au Bristol, \u00e0 l’Hotel Warwick Champs-Elys\u00e9es, chez Potel et Chabot et au chalet du Mont d’Arbois \u00e0 Meg\u00e8ve.<\/p>

En 1999, je m’installe \u00e0 Saint-F\u00e9lix Lauragais o\u00f9 je travaille au restaurant Le Cocagne.
En avril 2003, je cr\u00e9\u00e9 mon activit\u00e9 de chef cuisinier \u00e0 domicile<\/strong> \u00ab\u00a0La Po\u00eal\u00e9e\u00a0\u00bb et deviens membre de l’Association des chefs cuisiniers \u00e0 domicile, disciples d\u2019Auguste Escoffier.<\/p>

Mes voyages \u00e0 l’\u00e9tranger ainsi que dans nos r\u00e9gions de France m’ont permis de m’impr\u00e9gner de diverses cultures. Ils ont nourri ma curiosit\u00e9 et mon vocabulaire culinaire.<\/p>

Ces exp\u00e9riences m’ont amen\u00e9 \u00e0 go\u00fbter, appr\u00e9cier et utiliser, puis associer des produits de toute origine comme par exemple le \u00ab Magret de canard \u00e0 la sauce soja, topinambour aux pleurotes et poivre de Sechuan \u00bb, m\u00e9lange de tradition et d’exotisme, ou encore \u00ab Mousse au chocolat noir et tuber melanosporum \u00bb.<\/p>

\u00c1 l’\u00e9coute de mes clients et de leurs contraintes, je m’occupe de mettre en forme et en go\u00fbts la prestation dont ils r\u00eavent.<\/p>
